Elise--easiest trick in the world! Put your cake on the platter you'll be serving it from, and cut a bunch of strips of wax paper. Tuck them all around the edges of the cake, making a sort of protective collar, and frost the whole thing. When you're done, pull the strips away carefully, and you'll have a perfectly iced cake and a spotless white platter.
